Effect of frozen fish,turkey and chicken consumption in west africa

It is all known that about 7 0% of all consumed frozen fish,turkey,chicken in west africa ecially nigeria are imported. Those frozen foods take about a month to get to the consumer which has effect om human body. During the transportation period of the frozen food,they acquire lipid peroxidation which leads to quality deterioration,rancidity and accumulation of potential toxic compounds in food e.g malondialdehyde (MDA) content. For you to get a toxic free frozen food, it must not be up to 1 to 2 days of refrigeration for fresh fish and turkey, 3 to 5 days for chicken(source:USDA 2005). That means that the MDA detected is due to long cold storage i.e it increase the level of lipid peroxidation and thiobarbituric acid - reactive substance ind food.WHAT ARE THE RISKS: The major risk in the ingestion of foods cnntaining lipid peroxidation products increase risks of cancer and cardiovascular diseases (Esterbauer, 1993). This is a major problem in west africa
and what we should do is just make fresh fish,turkey and chicken available for us to eat because it has no trace of malondialdehyde contents
